Father’s Day is always bittersweet for me. My father, Henry Jones, Jr. went to be with the Lord in 2002. It is amazing that it has been a challenge to sustain family traditions without him. He had such a loving and kind spirit with a big booming voice. He had so many friends that brimmed in and out of our house at various holidays and there was always plenty of food! My mom is a great cook and unfortunately, I did NOT get the cooking bug. I don’t know if it is that I feel inadequate because she can cook so well, or what.
My Daddy LOVED sweets! He always had dessert after dinner even if it was a few cookies.

In true Father’s Day tradition, I bought ties for hubby from the girls but I also made MY strawberry cobbler. My Daddy would have flipped for my Strawberry Cobbler.
I would love to share my recipe with you (it is adapted from the one in the Mama Dips Recipe Book ):
2 buckets of fresh strawberries or 2 bags of 16oz frozen strawberries (frozen works better for the winter)
1 small packages of strawberry Jell-O
1 cup of sugar
Pinch of salt
1 tablespoon of cornstarch
2 boxes of Pillsbury Pie Crusts (The kind you roll out)—She recommends making your own but know this Diva likes things EASY!!!
Preheat oven to 375. Hull and wash the strawberries. Cut each strawberry in half or a little more if they are large. Drain them in a colander then place them in a large bowl. Mix the Jell-O, sugar, salt, and cornstarch together and pour the mixture over the strawberries. Cover the bottom of a 13 x 9 baking dish with 2 Pillsbury Pie Crusts overlapping. Sprinkle the crusts with Cinnamon Sugar. Put the mixture of sugar, salt, cornstarch, Jell-O and berries into your 13×9 baking dish on top of the crusts. Dot the berries with butter and sprinkle with a little more Cinnamon Sugar. Place 2 more Pillsbury Pie crusts over the berry mixture. Sprinkle with Cinnamon Sugar. Make small slits in the crusts with a knife. Bake on the lower rack of the oven for 1 hour and 30 minutes. An hour may do if you don’t like a flaky crust! This recipe will serve 10-15 people. Super easy to cut in half!!!
